All the State must convince the jury of is that you had lost the normal use of your mental or physical faculties, by reason of the introduction of alcohol, drugs, or some combination. Usually a case like this would be based on the driving facts (e.g. a car wreck or other bad driving facts observed by a witness) or observations made by the police officer. If your job duties include the need to have a valid driver's license or your alcohol use/abuse that cause your DUI could be found to be "substantially related" to your job duties, then it could be reasonable for your employer to request some information and documents regarding your arrest and conviction. If your arrest was publicized (some places in CA print the names, and occasionally the photos, of people arrested for DUI) you may be available in a simple Google search, obviously this is in the public record where you lived in CA, if they hire someone to go there it may be found.
