My parents want to separate their finances fairly with a third party looking out for both their interests.

It can be done - there is no reason that divorce has to be antagonistic, particularly if both parties want to achieve a reasonable settlement. And if an agreement is reached ahead of any filings, there is no need for either party to ever appear in court. Ultimately the parties will have to agree and sign the relevant documents, but a third party could conduct all the discussions with an attorney and work out the framework of the agreement. Feel free to get in touch if you'd like to discuss the possibilities.

You're worrying about evidence when you don't really need any. A divorce on the grounds of the marriage being irretrievably broken is obtained by a single affidavit by either party swearing that the marriage has broken down, the breakdown has lasted for more than six months, and that it is irretrievable.

My wife filled for divorce. I have been given 20 days to respond. Who do I respond too.

If you decide to hire a lawyer, the lawyer will respond with a Notice of Appearance. If you are trying to represent yourself, you would enter your own Notice of Appearance. You will send this to her lawyer and then file a copy with the Court. This lets the court know that your divorce should not be granted on a default; that there are issues that need to be resolve in your case.   Good luck!
