What happens if you had stopped reporting to probation and quit paying fines but then started paying fines again by mail? Would you go to jail?

Reporting (and staying out of criminal trouble) is the number one requirement of being on probation. It makes no sense to pay the fines and fees if one is not reporting. There is more than likely a warrant for the probationer's arrest.
